The Spaghetti al Granchio features tender manila clams and sweet, succulent rock crab meat (granchio means crab in Italian). A garlicky, white wine and tomato broth acts as “sauce” and the dish is finished with chopped fresh parsley and a judicious pinch of chili flakes. Usually there’s a little broth left over, so make sure you request an extra serving of focaccia to sop up every drop.
